  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning Use spicy taco seasoning for a spicier version.
  • 2 cups shredded cheese Try different types of cheese for a twist.
  • 1 bag tortilla chips Flavored tortilla chips can be used for variety.
  • 1 sour cream optional (For serving.)
  • 1 chopped green onions optional (For serving.)

Method
 

  1. Brown ground beef and drain excess fat.
  2. Combine ground beef, black beans, corn, diced tomatoes, and taco seasoning in a crockpot.
  3. Cook on low for 4-6 hours or high for 2-3 hours.
  4. Stir in shredded cheese and cook until melted.
  5. Serve over tortilla chips and top with sour cream and green onions, if desired.

Notes

For a creamier casserole, add a layer of cream cheese before adding the shredded cheese.
