Ingredients
  

Chicken
  • 1.25 lbs Chicken breast diced small
  • 1.75 tsp sweet smoked paprika
  • 1.5 tsp oregano
  • 1.5 tsp garlic powder
  • 0.5 tsp thyme
  • 0.5 tsp black pepper
  • 0.5 tsp salt
Pasta
  • 12 oz gluten-free farfalle
Sauce
  • 4 tbsp dairy free butter
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 2 cup chicken broth
  • 1.66 tbsp gluten free 1:1 flour
  • 2 cups dairy free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy free parmesan shredded
  • 2 tbsp pasta water as needed

Method
 

  1. Boil pasta according to package directions. Drain, reserving pasta water.
  2. Toss chicken with seasonings.
  3. Sear chicken in skillet over medium heat until internal temperature reaches 165 degrees. Transfer to a plate.
  4. Melt butter in the same skillet. Add sauce seasonings and simmer for about a minute.
  5. Add flour to the skillet and mix well, scraping the bottom of the skillet.
  6. Add chicken broth and heavy cream. Then, add the spinach and whisk well. Simmer while whisking for 3 to 4 minutes until the sauce is rich and creamy.
  7. Add parmesan cheese and stir until completely melted. Then, continue cooking, stirring occasionally, until the sauce reaches your desired thickness.
  8. Add pasta and toss to coat evenly. Add pasta water to thin the sauce if necessary.
  9. Add chicken and gently stir to make sure everything is coated. Enjoy!

Notes

For a richer flavor, consider adding a splash of white wine to the sauce while simmering.
