Ingredients
  

Vegetables
  • 1 medium butternut squash, peeled and cubed
  • 1 pound Italian sausage (sweet or spicy)
  • 8 ounces pasta (penne or fusilli)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste Salt and pepper
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 400°F (200°C). Toss squash with 1 tbsp olive oil, salt, and pepper; roast 25-30 mins.
  2. Cook pasta until al dente; drain and set aside.
  3. In a skillet, heat 1 tbsp olive oil; cook onion until translucent, then add garlic and sausage; cook until browned.
  4. Stir in thyme, sage, red pepper flakes; add roasted squash and pasta; toss to combine.
  5. Fold in spinach until wilted; sprinkle with Parmesan, season with salt and pepper, then serve.

Notes

For extra flavor, add a splash of balsamic vinegar before serving.
