Method
- Preheat oven to 400°F (200°C). Toss squash with 1 tbsp olive oil, salt, and pepper; roast 25-30 mins.
- Cook pasta until al dente; drain and set aside.
- In a skillet, heat 1 tbsp olive oil; cook onion until translucent, then add garlic and sausage; cook until browned.
- Stir in thyme, sage, red pepper flakes; add roasted squash and pasta; toss to combine.
- Fold in spinach until wilted; sprinkle with Parmesan, season with salt and pepper, then serve.
Notes
For extra flavor, add a splash of balsamic vinegar before serving.
