  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 diced bell pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Method
 

  1. Heat olive oil in a skillet, cook diced onion until translucent.
  2. Add garlic and bell pepper, cook for 2 minutes.
  3. Add ground beef, cook until browned, then stir in tomatoes, broth, cumin, paprika, salt, and pepper.
  4. Simmer for 15-20 minutes until thickened, then top with cheese and cover until melted.
  5. Garnish with parsley if desired and serve warm.
