Method
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, oil, and eggs.
- Combine wet and dry ingredients until just mixed. In a small bowl, mix brown sugar and cinnamon for the swirl.
- Pour half of the batter into the pan, sprinkle with cinnamon sugar, then top with remaining batter.
- Swirl the cinnamon mixture into the batter with a knife. Bake for 60 minutes or until a toothpick comes out clean.
Notes
Use very ripe bananas for best flavor and sweetness.
