Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the banana until smooth.
- Add the applesauce, milk, and vanilla extract to the mashed banana and mix well.
- In the same bowl, add the rolled oats, cinnamon, baking powder, and salt. Mix until all ingredients are well combined.
- If desired, stir in raisins, chocolate chips, or nuts.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
For extra flavor, try adding a dash of nutmeg or a sprinkle of shredded coconut to the batter.
