  • 1 cup rolled oats
  • 1 ripe banana mashed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • Pinch salt
  • 1/4 cup raisins, chocolate chips, or nuts Optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the banana until smooth.
  3. Add the applesauce, milk, and vanilla extract to the mashed banana and mix well.
  4. In the same bowl, add the rolled oats, cinnamon, baking powder, and salt. Mix until all ingredients are well combined.
  5. If desired, stir in raisins, chocolate chips, or nuts.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Bake for 12-15 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, try adding a dash of nutmeg or a sprinkle of shredded coconut to the batter.
