  • 6 large eggs
  • 1/2 cup milk (any kind)
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained) oil-packed, drained
  • 1/4 cup Kalamata olives, pitted and sliced pitted and sliced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh spinach
  • 1 clove garlic, minced minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C). Grease a small baking dish.
  2. Heat olive oil in a skillet over medium heat. Add red onion and garlic; cook until softened (3-5 minutes).
  3. Add spinach; cook until wilted (1-2 minutes).
  4. In a bowl, whisk eggs and milk. Season with salt and pepper.
  5. Stir in cooked onion, garlic, spinach, feta, sun-dried tomatoes, and olives.
  6. Pour egg mixture into the baking dish.
  7. Bake for 20-25 minutes, or until set and golden brown.
  8. Let cool slightly before serving. Enjoy!
