- Preheat oven to 375°F (190°C). Grease a small baking dish.

- Add spinach; cook until wilted (1-2 minutes).
- In a bowl, whisk eggs and milk. Season with salt and pepper.
- Stir in cooked onion, garlic, spinach, feta, sun-dried tomatoes, and olives.
- Pour egg mixture into the baking dish.
- Bake for 20-25 minutes, or until set and golden brown.
