Method
- Preheat oven to 350°F (175°C).
- Season chicken with Italian seasoning, salt, and pepper. Brown in a skillet until golden, then set aside.
- In the same skillet, combine Greek yogurt, milk, garlic, salt, and pepper to make sauce. Add sun-dried tomatoes.
- Transfer chicken to a baking dish, pour sauce over, sprinkle with Parmesan, and bake for 10 minutes. Flip chicken, bake another 10 minutes.
- In the last 5 minutes, add spinach and stir. Serve hot with toppings of sun-dried tomatoes and spinach.
Notes
For best results, use fresh spinach and medium-sized sun-dried tomatoes.
