Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon lemon zest
  • to taste salt and pepper
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • juice of 1 lemon lemon juice

Method
 

  1. Preheat grill to medium-high heat.
  2. Toss shrimp with olive oil, garlic, paprika, lemon zest, salt, and pepper.
  3. Skewer shrimp and grill for 2-3 minutes per side until pink.
  4. Mix quinoa, cherry tomatoes, cucumber, parsley, and lemon juice in a bowl.
  5. Serve grilled shrimp over quinoa salad, garnished with parsley.

Use fresh herbs for best flavor and serve immediately.
