Ingredients
  

Protein
  • 2 cups diced cooked chicken breast preferably shredded
  • 3 medium zucchinis zucchini, sliced about 300 grams
  • 1 cup low-fat shredded cheese cheddar or mozzarella
  • 1 cup sliced mushrooms
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • to taste Salt and pepper for seasoning

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté onion, garlic, and mushrooms until tender.
  3. Add cooked chicken, zucchini slices, and chicken broth to the skillet. Cook for 5 minutes until zucchini is slightly softened.
  4. Transfer mixture to the prepared baking dish. Top with shredded cheese.
  5. Bake for 20-25 minutes until cheese is melted and bubbly. Season with salt and pepper to taste before serving.

Notes

You can add extra vegetables or use turkey instead of chicken for variation.
