Method
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet, heat olive oil over medium heat. Sauté onion, garlic, and mushrooms until tender.
- Add cooked chicken, zucchini slices, and chicken broth to the skillet. Cook for 5 minutes until zucchini is slightly softened.
- Transfer mixture to the prepared baking dish. Top with shredded cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly. Season with salt and pepper to taste before serving.
Notes
You can add extra vegetables or use turkey instead of chicken for variation.
