Ingredients
  

Bananas
  • 3 pieces very ripe bananas the browner and spottier, the better for sweetness
  • 1/3 cup melted butter or coconut oil for dairy-free option
  • 3/4 cup granulated sugar can substitute with 2/3 cup honey
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch salt
  • 1.5 cups all-purpose flour
  • optional: 1/2 cup chopped walnuts or chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 4×8 inch loaf pan.
  2. Combine melted butter and mashed bananas in a large mixing bowl and stir until smooth.
  3. Add sugar, beaten egg, vanilla extract, baking soda, and salt; mix until well incorporated.
  4. Gradually add flour, stirring just until combined. Fold in walnuts or chocolate chips if using.
  5. Pour batter into the prepared loaf pan and bake for 55-60 minutes, until a toothpick inserted in the center comes out clean.
  6. Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use very ripe bananas for maximum sweetness and moisture.
