Ingredients
  

Bananas
  • 3 pieces very ripe bananas the browner and spottier, the better for sweetness
  • 1/3 cup melted butter or coconut oil for dairy-free option
  • 3/4 cup granulated sugar can substitute with 2/3 cup honey
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch salt
  • 1.5 cups all-purpose flour
  • 1/2 cup chopped walnuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mix mashed bananas and melted butter until smooth.
  3. Add sugar, beaten egg, vanilla, baking soda, and salt; stir well.
  4. Gradually add flour, mixing just until incorporated. Fold in nuts or chocolate chips if using.
  5. Pour batter into pan and bake for 55-60 minutes. Cover with foil after 35 minutes if over-browning.
  6. Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing.

Notes

For a dairy-free version, substitute butter with coconut oil.
