Method
- Preheat oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mix mashed bananas and melted butter until smooth.
- Add sugar, beaten egg, vanilla, baking soda, and salt; stir well.
- Gradually add flour, mixing just until incorporated. Fold in nuts or chocolate chips if using.
- Pour batter into pan and bake for 55-60 minutes. Cover with foil after 35 minutes if over-browning.
- Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing.
Notes
For a dairy-free version, substitute butter with coconut oil.
