  • 2 pieces ripe bananas mashed
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 pieces large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash bananas and mix with sugar, oil, and eggs until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Divide batter evenly into muffin cups and bake for 20 minutes or until golden brown.

Notes

For extra flavor, add a handful of walnuts or chocolate chips to the batter.
