- Cook the beef: Heat 1 tbsp oil in a large skillet over medium-high heat. Sear the beef until browned (about 2–3 minutes per side). Remove and set aside.
- Sauté veggies: In the same skillet, add remaining oil, onions, mushrooms, and garlic. Sauté for 5–6 minutes until softened and golden.
- Make the sauce: Sprinkle flour over the mushroom mixture, stir, and cook for 1 minute.
- Gradually stir in beef broth and Worcestershire sauce, scraping up any bits. Simmer for 3–4 minutes until slightly thickened.
- Add sour cream & beef: Lower heat, stir in sour cream, and return the beef to the pan. Simmer gently (don’t boil) for 2–3 minutes. Season with salt and pepper to taste.
- Serve: Spoon over cooked egg noodles or rice and garnish with fresh parsley if desired.
Notes
For a creamier sauce, ensure the flour is well incorporated, and simmer the sauce until it thickens. Serve over egg noodles for a traditional presentation.
