  • 2 cups cooked rice
  • 2 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, chicken, soup, broth, vegetables, garlic, onion, salt, and pepper in a bowl.
  3. Transfer to a greased baking dish and top with cheese.
  4. Bake covered for 25 minutes, then uncover and bake 10-15 minutes until bubbly and golden.
  5. Let cool briefly before serving.
