Ingredients
  

Meat
  • 2 lbs ground beef or turkey seasoned and cooked
  • 1 lb chicken breasts cooked and shredded
Grains
  • 2 cups brown rice cooked and divided
  • 2 cups quinoa cooked and divided
Vegetables & Beans
  • 4 cups mixed vegetables frozen or fresh
  • 2 cans black beans drained and rinsed
  • 2 cans diced tomatoes
Sauces & Broth
  • 1 jar marinara sauce
  • 2 cups vegetable broth
Cheese & Spices
  • 2 cups shredded cheese optional
  • Spices salt, pepper, garlic powder, onion powder, Italian seasoning

Method
 

  1. Cook ground meat with spices, divide into 5 portions, and freeze.
  2. Cook rice and quinoa separately, divide into 5 portions, and freeze.
  3. Cook chicken breasts in broth, shred, divide into 5 portions, and freeze.
  4. Simmer vegetables, beans, and tomatoes with Italian seasoning, divide into 5 portions, and freeze.
  5. Assemble meals with grains, meat, vegetables, sauce, and cheese, then freeze.
