Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup orange juice
  • zest of 1 orange orange zest
Leavening agents
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Cream butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs, orange juice, and orange zest; mix well.
  4. Mix dry ingredients separately, then combine with wet ingredients.
  5. Gently fold in cranberries, pour batter into pan, and bake 50-60 minutes.
  6. Cool for 10 minutes before transferring to a wire rack.

Notes

For extra flavor, add a glaze or dust with powdered sugar before serving.
