Ingredients
  

Vegetables
  • 2 medium eggplants sliced
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • optional Fresh basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Slice eggplants, salt, and let sit 15 mins. Rinse and dry.
  2. Sauté eggplant slices in olive oil until golden, about 5-7 mins per side.
  3. Layer marinara, eggplant, ricotta, and mozzarella in a baking dish. Repeat layers.
  4. Top with Parmesan, Italian seasoning, salt, and pepper. Cover with foil.
  5. Bake for 25 mins, remove foil, bake 15 mins until bubbly and golden. Cool slightly and serve.

Notes

For extra flavor, garnish with fresh basil before serving.
