Method
- Preheat oven to 375°F (190°C). Slice eggplants, salt, and let sit 15 mins. Rinse and dry.
- Sauté eggplant slices in olive oil until golden, about 5-7 mins per side.
- Layer marinara, eggplant, ricotta, and mozzarella in a baking dish. Repeat layers.
- Top with Parmesan, Italian seasoning, salt, and pepper. Cover with foil.
- Bake for 25 mins, remove foil, bake 15 mins until bubbly and golden. Cool slightly and serve.
Notes
For extra flavor, garnish with fresh basil before serving.
