Method
- Heat olive oil and sauté onion, garlic, and ginger until fragrant.
- Add onion mixture to slow cooker with chicken, pumpkin purée, spices, and coconut milk. Cook on low for 6–7 hours.
- Add carrots and potatoes, then layer chicken on top. Mix honey, soy sauce, ketchup, thyme, salt, and pepper; pour over ingredients.
- Cook on low for 6–7 hours until chicken and vegetables are tender. Adjust seasoning as needed.
- Serve warm, garnished as desired, with crusty bread or side vegetables.
Notes
For extra flavor, garnish with fresh herbs before serving.
