Vegetables
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
Main Protein
  • 4 pieces chicken thighs bone-in, skinless
Purees & Spices
  • 1 cup pumpkin purée
  • 2 tsp curry powder
  • 1 tsp cumin
  • 0.5 tsp cinnamon
  • 0.5 tsp salt
  • 0.25 tsp cayenne optional
Liquids
  • 1 can coconut milk
  • 2 carrots carrots sliced
  • 2 potatoes potatoes diced
Sauces & Sweeteners
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
Additional Flavorings
  • 1 tsp thyme
  • to taste pepper

Method
 

  1. Heat olive oil and sauté onion, garlic, and ginger until fragrant.
  2. Add onion mixture to slow cooker with chicken, pumpkin purée, spices, and coconut milk. Cook on low for 6–7 hours.
  3. Add carrots and potatoes, then layer chicken on top. Mix honey, soy sauce, ketchup, thyme, salt, and pepper; pour over ingredients.
  4. Cook on low for 6–7 hours until chicken and vegetables are tender. Adjust seasoning as needed.
  5. Serve warm, garnished as desired, with crusty bread or side vegetables.

Notes

For extra flavor, garnish with fresh herbs before serving.
