  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 pound pasta spaghetti, fettuccine, or penne
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream optional, can substitute with more chicken broth for a lighter version
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • to taste Salt and pepper
  • optional Red pepper flakes for a little heat

Method
 

  1. Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken to the skillet and cook until browned and cooked through.
  4. Add minced garlic to the skillet and cook for about 30 seconds, until fragrant.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in heavy cream (if using) and Parmesan cheese. Cook until the cheese is melted and the sauce has thickened slightly.
  7. Season with salt, pepper, and red pepper flakes (if using).
  8. Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  9. Stir in chopped parsley.
  10. Serve immediately and garnish with extra Parmesan cheese, if desired.

Notes

For a richer flavor, use freshly grated Parmesan cheese. You can also add vegetables like spinach or mushrooms to the dish.
