Method
- Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- Heat olive oil in a large skillet over medium heat.
- Add chicken to the skillet and cook until browned and cooked through.
- Add minced garlic to the skillet and cook for about 30 seconds, until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream (if using) and Parmesan cheese. Cook until the cheese is melted and the sauce has thickened slightly.
- Season with salt, pepper, and red pepper flakes (if using).
- Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Stir in chopped parsley.
- Serve immediately and garnish with extra Parmesan cheese, if desired.
Notes
For a richer flavor, use freshly grated Parmesan cheese. You can also add vegetables like spinach or mushrooms to the dish.
