Method
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes). Season with salt and pepper.
- Add minced garlic to the skillet and cook for about 30 seconds, until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in butter, Parmesan cheese, and heavy cream (if using). Cook until the sauce thickens slightly, about 2-3 minutes.
- Add the cooked pasta to the skillet and toss to coat with the sauce.
- Stir in fresh parsley.
- Season with additional salt and pepper to taste. Add red pepper flakes if desired.
- Serve immediately and enjoy!
Notes
For a lower-fat version, skip the heavy cream and use skim milk instead.
