  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 pound pasta (penne, spaghetti, or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 0.25 cup heavy cream optional, for extra creaminess
  • 0.25 cup chopped fresh parsley
  • to taste Salt and pepper
  • Optional Red pepper flakes for a touch of spice

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes). Season with salt and pepper.
  4. Add minced garlic to the skillet and cook for about 30 seconds, until fragrant.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in butter, Parmesan cheese, and heavy cream (if using). Cook until the sauce thickens slightly, about 2-3 minutes.
  7. Add the cooked pasta to the skillet and toss to coat with the sauce.
  8. Stir in fresh parsley.
  9. Season with additional salt and pepper to taste. Add red pepper flakes if desired.
  10. Serve immediately and enjoy!

Notes

For a lower-fat version, skip the heavy cream and use skim milk instead.
