Ingredients

  • 3 pieces ripe bananas mashed
  • 2 cups gluten-free flour
  • 0.5 cup honey or maple syrup
  • 0.25 cup olive oil or melted coconut oil
  • 3 pieces large eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 0.5 cup chopped nuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mash bananas and mix with honey, oil, eggs, and vanilla.
  3. Stir in gluten-free flour and optional add-ins until just combined.
  4. Pour batter into the prepared loaf pan and smooth the top.
  5. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before slicing and serving.

Notes

Use very ripe bananas for best flavor and sweetness.
