  • 1 pound ground beef
Vegetables
  • 2 medium zucchinis zucchini, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (cheddar or mozzarella)
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook onion and garlic in olive oil until softened.
  3. Add ground beef; cook until browned. Drain excess fat.
  4. Mix in zucchini, tomatoes, seasoning, salt, and pepper; cook 5-7 mins.
  5. Transfer to baking dish, top with cheese, and bake 20-25 mins.
