Ingredients
  

Cake Flour
  • 1 1/2 cups cake flour fluffed, spooned and leveled
  • 2 tbsp cake flour additional for conversion
Granulated Sugar
  • 3/4 cup granulated sugar
Salt
  • 1/2 tsp coarse Kosher salt use half if using table salt
Baking Powder
  • 1 1/2 tsp baking powder
Large Eggs
  • 2 large eggs
Whole Milk
  • 3/4 cup whole milk
Melted Butter or Vegetable Oil
  • 1/2 cup melted butter or vegetable oil
Vanilla Extract
  • 1 1/2 tsp vanilla extract
Unsalted Butter (softened)
  • 1 1/4 cups unsalted butter softened to room temperature
Powdered Sugar
  • 2 1/2 cups powdered sugar
Meringue Powder (optional)
  • 1/2 tbsp meringue powder optional
Salt
  • 1/4 tsp coarse Kosher salt use half if using table salt
Vanilla Extract
  • 1 1/2 tsp vanilla extract
Milk or Cream (if needed)
  • 2-3 tbsp milk or cream only if needed

Method
 

  1. Preheat oven and prepare cupcake liners.
  2. Mix dry ingredients and combine with wet ingredients until smooth.
  3. Fill cupcake liners 2/3 full and bake for 20 minutes.
  4. Allow cupcakes to cool before frosting.
  5. Prepare frosting and decorate cupcakes as desired.

Notes

Ensure not to overmix the batter for a light texture.
