- Mix chicken, broccoli, cauliflower rice, and half of the cheese in a bowl.
- Whisk cream cheese, broth, eggs, garlic, onion, salt, and pepper; pour over the mixture and stir.
- Transfer to baking dish, top with remaining cheese, and bake 25-30 minutes until bubbly.
- Let cool slightly, garnish with parsley if desired, and serve.
