Ingredients

  • 2 cups cooked, shredded chicken
Vegetables
  • 1 cup broccoli florets
  • 1 cup cauliflower rice
Dairy
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup chicken broth
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • for garnish fresh parsley (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Mix chicken, broccoli, cauliflower rice, and half of the cheese in a bowl.
  3. Whisk cream cheese, broth, eggs, garlic, onion, salt, and pepper; pour over the mixture and stir.
  4. Transfer to baking dish, top with remaining cheese, and bake 25-30 minutes until bubbly.
  5. Let cool slightly, garnish with parsley if desired, and serve.
