Method
- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Whisk eggs and milk (if using), season with salt and pepper.
- Fold in bell peppers, spinach, meat, cheese, and herbs.
- Pour mixture into muffin cups, filling about 3/4 full.
- Bake for 15 minutes until set and golden. Cool slightly before removing.
