Ingredients
  

Eggs
  • 8 large eggs
  • 0.25 cup milk or cream optional
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 0.5 cup cooked turkey bacon or beef sausage, diced
  • 0.5 cup shredded cheddar cheese
  • to taste Salt and pepper
  • optional Optional herbs (parsley, chives, or thyme)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Whisk eggs and milk (if using), season with salt and pepper.
  3. Fold in bell peppers, spinach, meat, cheese, and herbs.
  4. Pour mixture into muffin cups, filling about 3/4 full.
  5. Bake for 15 minutes until set and golden. Cool slightly before removing.

Notes

You can prepare these egg cups ahead of time and refrigerate for a quick breakfast.
