Easy Mediterranean Baked Mackerel Fish

Ingredients
  

Fish
  • 2 whole mackerel, gutted and cleaned
Produce
  • 1 lemon, sliced
  • 1 red onion, thinly sliced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup Kalamata olives, pitted and halved
  • 2 cloves garlic, minced
Herbs & Spices
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp fresh parsley, chopped
Other
  • 2 tbsp olive oil
  • to taste Salt and black pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Rinse mackerel and pat dry.
  3. Drizzle olive oil in baking dish.
  4. Arrange red onion slices in the dish.
  5. Place mackerel on top of onions.
  6. Stuff mackerel with lemon, garlic, oregano, and parsley.
  7. Scatter tomatoes and olives around the fish.
  8. Drizzle remaining olive oil over fish and vegetables.
  9. Season with salt and pepper.
  10. Bake for 20-25 minutes, until cooked through.
  11. Serve immediately.

Notes

For extra flavor, marinate the mackerel for 30 minutes before baking.
