Method
- Preheat oven to 400°F (200°C).
- Rinse mackerel and pat dry.
- Drizzle olive oil in baking dish.
- Arrange red onion slices in the dish.
- Place mackerel on top of onions.
- Stuff mackerel with lemon, garlic, oregano, and parsley.
- Scatter tomatoes and olives around the fish.
- Drizzle remaining olive oil over fish and vegetables.
- Season with salt and pepper.
- Bake for 20-25 minutes, until cooked through.
- Serve immediately.
Notes
For extra flavor, marinate the mackerel for 30 minutes before baking.
