  • 6 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/4 cup chopped fresh spinach

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Whisk together eggs, milk, salt, and pepper in a bowl.
  3. Heat olive oil in a skillet over medium heat. Add red bell pepper and onion and cook until softened, about 5 minutes.
  4. Stir in spinach and cook until wilted, about 1 minute.
  5. Pour egg mixture into the skillet.
  6. Sprinkle feta cheese, Kalamata olives, and sun-dried tomatoes over the egg mixture.
  7. Bake in preheated oven for 20-25 minutes, or until the casserole is set and golden brown.
  8. Let cool slightly before slicing and serving.
