Method
- Preheat oven to 375°F (190°C).
- Whisk together eggs, milk, salt, and pepper in a bowl.
- Heat olive oil in a skillet over medium heat. Add red bell pepper and onion and cook until softened, about 5 minutes.
- Stir in spinach and cook until wilted, about 1 minute.
- Pour egg mixture into the skillet.
- Sprinkle feta cheese, Kalamata olives, and sun-dried tomatoes over the egg mixture.
- Bake in preheated oven for 20-25 minutes, or until the casserole is set and golden brown.
- Let cool slightly before slicing and serving.
