Method
- Cook the Pasta:Cook the pasta according to package directions until al dente. Drain and set aside.
- Cook the Chicken:While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through (about 5-7 minutes). Season with salt and pepper.
- Sauté the Vegetables:Add the minced garlic and sliced red onion to the skillet with the chicken and cook for 1-2 minutes, until fragrant and the onion is softened.
- Add Tomatoes & Olives:Stir in the halved cherry tomatoes and Kalamata olives. Cook for another 2-3 minutes, until the tomatoes start to soften and release their juices.
- Combine & Finish:Add the cooked pasta and fresh spinach to the skillet. Toss everything together until the spinach wilts.
- Season & Serve:Stir in the lemon juice, dried oregano, and dried basil. Season with salt and pepper to taste.
- Garnish:Sprinkle with crumbled feta cheese and serve immediately.
Notes
Add a pinch of red pepper flakes for a little heat.
