Easy Mediterranean Chicken Pasta

Ingredients
  

Pasta
  • 1 pound pasta penne, rotini, farfalle, or whole wheat options work great
Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Other
  • 2 tablespoons olive oil for sautéing
  • 2-3 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 1/2 cup Kalamata Olives pitted and halved
  • 1/2 medium red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 5 ounces fresh spinach
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt & Pepper

Method
 

  1. Cook the Pasta:Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Cook the Chicken:While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through (about 5-7 minutes). Season with salt and pepper.
  3. Sauté the Vegetables:Add the minced garlic and sliced red onion to the skillet with the chicken and cook for 1-2 minutes, until fragrant and the onion is softened.
  4. Add Tomatoes & Olives:Stir in the halved cherry tomatoes and Kalamata olives. Cook for another 2-3 minutes, until the tomatoes start to soften and release their juices.
  5. Combine & Finish:Add the cooked pasta and fresh spinach to the skillet. Toss everything together until the spinach wilts.
  6. Season & Serve:Stir in the lemon juice, dried oregano, and dried basil. Season with salt and pepper to taste.
  7. Garnish:Sprinkle with crumbled feta cheese and serve immediately.

Notes

Add a pinch of red pepper flakes for a little heat.
