Ingredients
  

Stir Fry Ingredients
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1/2 red onion sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives halved
  • 1/4 cup crumbled feta cheese
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • to taste Salt and pepper
  • Optional Cooked couscous or quinoa for serving

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through.
  3. Add bell peppers, zucchini, and red onion and cook until tender-crisp.
  4. Stir in garlic, oregano, and basil. Cook for 1 minute more.
  5. Add cherry tomatoes and Kalamata olives. Cook until tomatoes soften.
  6. Season with salt and pepper to taste.
  7. Remove from heat and stir in feta cheese.
  8. Serve over couscous or quinoa, if desired.

Notes

Adjust the amount of feta cheese to your liking for a saltier or milder flavor.
