- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through.
- Add bell peppers, zucchini, and red onion and cook until tender-crisp.
- Stir in garlic, oregano, and basil. Cook for 1 minute more.
- Add cherry tomatoes and Kalamata olives. Cook until tomatoes soften.
- Season with salt and pepper to taste.
- Remove from heat and stir in feta cheese.
- Serve over couscous or quinoa, if desired.
