Ingredients
  

Tuna Salad
  • 2 cans tuna in olive oil drained
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley
  • to taste Salt and pepper

Method
 

  1. Combine tuna, cucumber, red onion, olives, and feta in a bowl.
  2. Whisk lemon juice, olive oil, parsley, salt, and pepper in a small bowl.
  3. Pour dressing over tuna mixture and toss gently.
  4. Serve immediately or chill. Enjoy with crackers, pita, or lettuce.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing.
