Ingredients
  

Meat and Beans
  • 1 pound ground beef
  • 1 can (15 oz) oz black beans, drained and rinsed
  • 1 can (15 oz) oz corn, drained
  • 1 can (10 oz) oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 6-8 pieces flour tortillas, cut into quarters
  • 1/2 cup sour cream (optional)
  • Chopped fresh cilantro for garnish (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Cook beef until browned, then add beans, corn, tomatoes, and seasoning; cook 5 mins.
  2. Spread beef mixture in a 9x13 dish, layer half of the tortillas, then half of the salsa and cheese.
  3. Repeat layers with remaining ingredients, top with cheese.
  4. Cover with foil, bake 20 mins, then remove foil and bake 5-10 mins until bubbly.
  5. Let cool briefly, then serve topped with sour cream and cilantro if desired.

Notes

For a spicier flavor, add hot sauce or jalapeños.
