  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)

  • Sour cream Sour cream, for serving
  • Chopped cilantro Chopped cilantro, for garnish

Method
 

  1. Cook onion and garlic until softened.
  2. Add ground beef and cook until browned.
  3. Stir in taco seasoning, beans, corn, and salsa; cook for 5-7 minutes.
  4. Top with cheese, cover to melt.
  5. Serve in tortillas with sour cream and cilantro.
