Ingredients
  

Main ingredients
  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups vegetable or chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • for garnish Fresh cilantro optional

Method
 

  1. Combine rice, beans, corn, tomatoes, and broth in a large pot.
  2. Add spices, stir, and bring to a boil.
  3. Reduce heat, cover, and simmer for 20 minutes until rice is cooked.
  4. Stir in half of the cheese until melted, then top with remaining cheese and cover until melted.
  5. Garnish with cilantro if desired and serve warm.

Notes

You can customize the spice level by adjusting the chili powder.
