Method
- In a large bowl, whisk together all dry ingredients.
- In a separate bowl, combine water, melted butter, and vanilla extract if using.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Heat a skillet or griddle over medium heat and lightly grease.
- Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.
Notes
For fluffier pancakes, do not overmix the batter.
