Ingredients
  

Dry Ingredients
  • 4 cups all-purpose flour
  • 2 Tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 3 Tbsp granulated sugar
  • ½ cup powdered milk (whole, skim, or buttermilk)
  • 1 cup pancake mix
  • ¾ cup water
  • 1 Tbsp melted butter (or neutral oil)
  • ½ tsp vanilla extract (optional)

Method
 

  1. In a large bowl, whisk together all dry ingredients.
  2. In a separate bowl, combine water, melted butter, and vanilla extract if using.
  3. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Heat a skillet or griddle over medium heat and lightly grease.
  5. Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.

Notes

For fluffier pancakes, do not overmix the batter.
