Ingredients
  

Dry ingredients
  • 2 cups pancake mix
  • 1 cup milk or as called for on the pancake box
  • 1 egg egg
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips or add-ins e.g., strawberries, blueberries, nuts

Method
 

  1. Preheat oven to 350°F (175°C). Spray a 12-cup muffin tin with nonstick spray.
  2. Mix all ingredients in a large bowl until well combined.
  3. Divide batter evenly into muffin cups.
  4. Bake for 15 minutes until golden.
  5. Serve warm, with toppings if desired.
