Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix pumpkin, sugar, oil, eggs, and vanilla until combined.
- Whisk dry ingredients together, then add to wet ingredients and stir.
- Pour batter into pan and bake for 60-70 minutes.
- Cool for 10 minutes, then transfer to wire rack to cool completely.
