Method
- Preheat oven to 425°F (220°C). Peel and cube sweet potatoes.
- Toss cubes with olive oil, salt, pepper, paprika, and maple syrup if using.
- Spread on a parchment-lined baking sheet and roast for 25-30 minutes, turning halfway.
- Remove from oven, let cool slightly, and garnish with herbs if desired.
