Easy Sheet Pan Salmon and Veggies

Ingredients
  

Vegetables
  • 4 large carrots chopped
  • 2 medium zucchini chopped
  • ½ red onion red onion sliced
  • 1 bunch broccolini chopped
  • 1 small red bell pepper chopped
Salmon
  • 1 ¼ pounds salmon cut into personal-sized fillets
Seasonings and Oil
  • 2 to 3 tablespoons avocado oil divided
  • 1 ¼ teaspoons sea salt divided
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika

Method
 

  1. Preheat oven to 400°F (200°C). Toss vegetables with 1 tablespoon of avocado oil, half the salt, garlic powder, and paprika. Spread on a sheet pan.
  2. Drizzle remaining oil and salt over salmon fillets, season with garlic powder and paprika. Place on the sheet pan with vegetables.
  3. Bake for 20 minutes until salmon is cooked through and vegetables are tender.
  4. Serve hot, garnished as desired.

Notes

For extra flavor, add lemon juice before serving.
