Ingredients
  

Vegetables
  • 4 large carrots, chopped
  • 2 medium zucchini, chopped
  • ½ red onion red onion, sliced
  • 1 bunch broccolini, chopped
  • 1 small red bell pepper, chopped
Salmon
  • 1 ¼ pounds salmon, cut into personal-sized fillets
  • 2 to 3 tablespoons avocado oil, divided
  • 1 ¼ teaspoons sea salt, divided
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika

Method
 

  1. Preheat oven to 400°F (200°C). Toss vegetables with 1 tablespoon avocado oil and half the salt, then spread on a sheet pan.
  2. Rub salmon fillets with garlic powder, paprika, remaining salt, and 1 tablespoon avocado oil. Place on the sheet pan with vegetables.
  3. Roast in the oven for 15-20 minutes until salmon is cooked through and vegetables are tender.
  4. Remove from oven and serve immediately.

Notes

For extra flavor, squeeze fresh lemon over the salmon before serving.
