  • 4 cups shredded zucchini about 2 medium zucchinis
  • 1 cup grated cheese cheddar or mozzarella
  • 1/2 cup cooked quinoa optional for added protein
  • 1 cup tomato sauce
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix shredded zucchini, cheese, quinoa, tomato sauce, garlic, and oregano in a bowl.
  3. Transfer mixture to a baking dish and spread evenly.
  4. Bake for 30 minutes until golden and bubbly.
  5. Let cool slightly before serving.
