Ingredients
  

Sweet Potatoes
  • 2 large sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup mini marshmallows (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Peel and boil sweet potatoes until tender, about 15-20 minutes.
  2. Mash sweet potatoes until smooth. Mix in brown sugar, milk, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt.
  3. Pour mixture into a greased baking dish. Sprinkle mini marshmallows on top if desired.
  4. Bake for 25-30 minutes until set and lightly browned. Let cool slightly before serving.
