Ingredients
  

Sweet Potatoes
  • 2 cups mashed sweet potatoes about 2 large sweet potatoes
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup mini marshmallows optional for topping

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Boil, peel, and mash sweet potatoes until smooth.
  3. Mix mashed sweet potatoes with sugar, milk, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt.
  4. Pour mixture into a greased 1.5-quart baking dish, top with marshmallows if desired.
  5. Bake for 25-30 minutes until set and golden. Cool briefly before serving.

Notes

For a richer flavor, try adding a pinch of nutmeg or cinnamon on top before baking.
