Ingredients
  

Rice and Water
  • 1 cup brown rice
  • 2 cups water
Meat and Seasoning
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
Vegetables and Toppings
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cherry tomatoes, halved
  • 1 avocado diced
  • 1 cup shredded lettuce
  • 0.5 cup shredded cheese (cheddar or mexican blend)
Dairy and Garnish
  • to taste sour cream or greek yogurt
  • optional fresh cilantro
  • 1 lime wedges

Method
 

  1. Cook rice in water until tender, about 40-45 minutes.
  2. Brown the ground meat in a skillet, add taco seasoning with a splash of water, simmer 5 minutes.
  3. Stir in black beans and corn, cook 2-3 minutes.
  4. Assemble bowls with rice, meat mixture, tomatoes, avocado, lettuce, cheese, and sour cream. Garnish with cilantro and lime wedges.
