Easy Taco Stuffed Sweet Potatoes

Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes washed and pierced
  • 1 cup cooked ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 avocado diced avocado
  • fresh cilantro for garnish
  • salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-60 minutes until tender.
  2. Cook ground beef or turkey in a skillet until browned; add taco seasoning, beans, corn, and tomatoes. Heat through.
  3. Let sweet potatoes cool slightly, then cut in half and fluff insides with a fork.
  4. Fill each sweet potato half with the meat mixture, top with cheese, and bake for 5-10 minutes until cheese melts.
  5. Top with diced avocado, cilantro, and season with salt and pepper. Serve warm.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
