Easy Taco Stuffed Sweet Potatoes

Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn fresh, frozen, or canned
  • 1 cup diced tomatoes fresh or canned
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste salt and pepper
  • 1 cup shredded cheese cheddar or Mexican blend
  • optional toppings avocado, sour cream, cilantro, lime wedges

Method
 

  1. Preheat oven to 400°F (200°C). Wash and poke holes in sweet potatoes, then bake for 45-60 minutes.
  2. Mix black beans, corn, tomatoes, chili powder, cumin, salt, and pepper in a bowl.
  3. Let sweet potatoes cool, then slice in half and scoop out some flesh.
  4. Fill each half with the taco mixture, top with cheese, and bake for 5-10 minutes until melted.
  5. Add optional toppings before serving.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime.
