Method
- Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and bake for 45-50 minutes.
- Cook ground beef or turkey in a skillet until browned, then add taco seasoning, beans, corn, and tomatoes. Heat through.
- Let sweet potatoes cool slightly, then slice open lengthwise and stuff with the taco mixture.
- Top with shredded cheese, diced avocado, and a dollop of sour cream or yogurt. Garnish with cilantro and serve.
