Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes
  • 1 cup cooked ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded cheese (cheddar or mexican blend)
  • 1 avocado diced avocado
  • sour cream or greek yogurt sour cream or greek yogurt (for topping)
  • chopped cilantro chopped cilantro (for garnish)
  • to taste salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and bake for 45-50 minutes.
  2. Cook ground beef or turkey in a skillet until browned, then add taco seasoning, beans, corn, and tomatoes. Heat through.
  3. Let sweet potatoes cool slightly, then slice open lengthwise and stuff with the taco mixture.
  4. Top with shredded cheese, diced avocado, and a dollop of sour cream or yogurt. Garnish with cilantro and serve.
