Ingredients
  

Pasta and Vegetables
  • 12 oz uncooked pasta (penne or rigatoni)
  • 2 cups marinara sauce
  • 1 cup vegetable broth
  • 1 cup chopped spinach
  • 1 cup diced bell pepper
  • 1 cup sliced mushrooms
  • 1 teaspoon dried Italian herbs
  • to taste Salt and pepper
  • 1 cup vegan cheese (optional)
  • for garnish Fresh basil (optional)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix pasta, marinara, broth, spinach, bell pepper, mushrooms, herbs, salt, and pepper in a bowl.
  3. Transfer to a baking dish, top with vegan cheese if using.
  4. Bake covered for 30 minutes, then uncover and bake 10-15 minutes until golden.
  5. Let cool briefly, garnish with basil if desired, and serve.

Notes

You can add extra vegetables or vegan cheese for more flavor.
