Method
- Heat 1 tablespoon of oil in a skillet over medium heat.
- Scramble eggs in the skillet, cook, then remove and set aside.
- Add remaining oil and sauté vegetables until tender.
- Mix in cooked rice and soy sauce, cook for 2-3 minutes.
- Return eggs to skillet, add green onions, salt, pepper, and stir.
- Serve hot and enjoy!
Notes
You can add more vegetables or adjust seasoning to taste.
