Egg Fried Rice

Ingredients
  

Rice and Vegetables
  • 2 cups cooked rice
  • 2 pieces eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions green onions, chopped
  • to taste Salt and pepper

Method
 

  1. Heat 1 tablespoon of oil in a skillet over medium heat.
  2. Scramble eggs in the skillet, cook, then remove and set aside.
  3. Add remaining oil and sauté vegetables until tender.
  4. Mix in cooked rice and soy sauce, cook for 2-3 minutes.
  5. Return eggs to skillet, add green onions, salt, pepper, and stir.
  6. Serve hot and enjoy!

Notes

You can add more vegetables or adjust seasoning to taste.
