Ingredients
  

Main
  • 1 medium spaghetti squash
  • 6 large eggs
  • 1 cup diced vegetables (e.g., bell peppers, onions, spinach)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1/4 cup nutritional yeast (optional)
  • as needed Fresh herbs (e.g., parsley, basil)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut squash, roast for 40-45 mins, then scrape into strands.
  3. Mix eggs, garlic, onion powder, and nutritional yeast.
  4. Combine squash, vegetables, and egg mixture, then bake for 25-30 mins.
  5. Garnish with herbs and serve.

Notes

Ensure vegetables are diced small for even cooking.
